I made some yummy goodness over last weekend and just couldn’t wait until Sunday to share it with you. The recipe uses spelt and oat/millet flours and turned out fantastic!
Apple Drop Biscuits
Clean Eating, January/February 2010
Makes: 24 biscuits. Hands-on time: 15 minutes. Total time: 30 to 35 minutes.
Nutrients per 1-tsp serving: Calories: 40; Total Fat: 1.5 g; Sat. Fat: 0 g; Carbs: 5 g; Fiber: 1 g; Sugars: 1 g; Protein: 1 g; Sodium: 0 mg; Cholesterol: 0 mg
INGREDIENTS
- 1 cup spelt flour
- 3/4 cup oat or millet flour
- 4 tsp baking powder
- 1 tsp cinnamon, ground
- 1/2 tsp baking soda
- 1/8 tsp sea salt
- 2 tbsp raw organic honey (I used regular honey)
- 1/4 cup olive oil
- 1 cup low-fat plain yogurt or nonfat Greek-style yogurt
- 1 cup apples, unpeeled, shredded with grater
- Olive oil cooking spray
DIRECTIONS
Preheat oven to 400F. In a medium bowl, whisk together dry ingredients.
In a small bowl, whisk together honey, oil, yogurt, and apples.
Add wet ingredients to dry ingredients and combine. Do not over-mix.
Sweetened Oat Topping
INGREDIENTS
1/4 cup rolled oats
1 tsp olive oil
1 tsp organic evaporated cane juice or Sucanat
DIRECTIONS
In a small bowl, mix all ingredients until combined.
Grating the apple was a bit of a tough feat!
Mist a baking sheet with cooking spray. Drop dough by rounded tablespoons onto baking sheet, 1 inch apart. Sprinkle Sweetened Oat Topping on each biscuit, if desired. Bake 10 to 15 minutes or until biscuits are golden.
They tasted as good as they looked!!!
FINAL THOUGHTS:
I have no idea what “organic evaporated cane juice” or “Sucanat” is or where you buy it, so I used sugar free syrup. Yeah it’s processed, but it was only a small amount, and it did the trick. I also had to add a little bit of water to this mixture as it wasn’t holding together very well at first.
The kids LOVED this treat and so did my husband. A HUGE success – I would recommend these for sure!

Thank you for sharing the article! You know, I always knew there was something off about McDonald’s food. When food doesn’t naturally decompose (have you ever seen a rotten McD’s french fry?), then you know that it is all chemical!

GREAT point about the fries. I mentioned that to my husband and he reminded me about the time we found old McDonald’s fries in our old car that had been sitting for over a year. They were intact and I am thoroughly grossed out.

A good thing I don’t eat anything on that list & have not for years! After watching Jamie Olver make his nuggets on his show, crap, I would not get near the dang things!

A) Fast food is niether.
B) Can’t do the Apple Drop Bisccuits; even middle age fitness trainers can have food issues. These look greay, which means I would eat the entire batch.

I tink I’ve seen the cane juice and sucanat on the sugar aisle at the grocery. But I don’t think 1 tsp of s-f syrup spread over 24 biscuits is ruinous. :)
I’ll bet these would freeze well. I’m going to give it a try.
