It’s so funny how I can lose a few pounds and be happy – like all the time. Maybe it’s because I’m a happy person anyway, maybe it’s because I surround myself with happy people in my life, I don’t know; but the weight coming off is icing on the cake!
I still have PITA (pain-in-the-ass) clients, my finances are an utter mess, my kids are a trip and my house is a disaster. But I still managed to smile just about all day long yesterday.
Here I am at work, in the midst of a crazy busy day.
Why? Because I’m changing my life pound by pound and I know there are great things on the horizon for me. Things like… tilapia fish.
I bought a George Foreman Grill back in December and I love that thing. I cook just about everything on it. Last night I thought why not cook up some of that frozen tilapia fish I have in the freezer? Would it be any good on the grill?
I keep it simple. I only seasoned the fish with pepper and garlic salt.
I was happily surprised at how GOOD it turned out. The cook time is so fast with the grill – just about 7 minutes. It kept the fish nice and moist, and it didn’t fall apart much compared to pan frying in olive oil. And the best part – it’s not oily and greasy!
Doesn’t it look tasty?! Notice the nice grill marks. Yum!
Of course this is the entire family’s fish, not just my serving. I usually have one piece for a serving size and a salad or side veggie to go with it. I try to stick to the small meal mentality that my trainer turned me on to. Basically, portions should be no bigger than fist size. It’s an easy measurement and a good rule of thumb.
Do you have a George Foreman Grill or another kitchen appliance you can’t live without?

Nice pictures-of you AND the fish :) And congrats on your steady progress-keep up the good work. Quick question re: the tilapia-did you thaw it before grilling it? I have a Foreman, but haven’t used it in a long while- you’ve reminded me that I have the thing, and have given me a quick dinner idea. Thanks!

I forgot to answer Elaine’s original question. I did defrost the fish in the microwave first. It was still semi-hard, but not frozen when I threw it on the grill, so that may have helped with the moistness. :)

I use my George Foreman grill just about every day to grill chicken- I’ve never thought about using it to grill fish before, that will be on my to-do list!
p.s. you are happy because you are making time for you to be the real you.

I’d be lost without my crockpot and my GF grill. Thanks so much for this gentle reminder that after almost 3 years at this, I *still* haven’t tried tilapia. Will remedy that this weekend. :)

For me, it was always about the icing & not the cake! :-)
I am not a fish person BUT that does look good!
What can’t I live without: my microwave & convection toaster oven. I am not a cook ! :-)

I bought a George Foreman last year (actually I think we have the same one). I love it! I grill everything on it! Tonight, I will be grilling shrimp and some veggies. It is an amazing piece of equipment!
The tilapia looked delish!

John just told me I need to get some shrimp and try it because you are doing it. LOL I hate seafood… But I suppose I could try shrimp again. The one time I tried it when I was 10 I barfed. Don’t know if it was the taste or the texture.

I used to have a Foreman grill, but lazy girl that I am, I didn’t like the mess that it made. Maybe they are better now, but the one I had had a little drip pan for the grease run off and it was a pain to clean.
Lately I’ve been roasting a lot of vegetables with just a touch of olive oil and seasoning. It takes no real equipment, but makes the vegetables taste so much better than steaming.

Still has the drip pan, but it does come with a little utensil to help clean it and scrape the gunk off. My mother in law was over last week when I was using mine and she said the same thing as you – she hates cleaning it, that’s why she stopped using hers. But I don’t mind so much, seems like I’m always cleaning anyway… *sigh*

I see those grills all the time at yard sales but haven’t bought one. I’m like you – always cleaning so I don’t think I’d mind cleaning it.
